Great importance is attached to the quality control of agricultural crops in strengthening the country’s food security. This textbook describes the process of conducting laboratory tests of fresh fruits, vegetables, and cereal crops, the methods for conducting techno-chemical analyses, as well as modern equipment and tools used for quality control of food products in food industry enterprises, their operational features, calculations related to quality control, and the methodology for conducting experimental work.
The main priorities for the development of the food industry are increasing production volumes, fully utilizing the production capabilities of the country’s manufacturers, regardless of ownership type, implementing new efficient technologies, and producing competitive products that meet global standards.
The growth in agricultural crop volumes, improvement in their quality, and increased diversity of varieties will gradually reduce the import of products and ensure the country’s food security. The main goal of the course on quality control of agricultural crops is to teach future specialists how to conduct laboratory tests of agricultural crops, apply chemical, physical, and physico-chemical methods for techno-chemical analysis, use modern equipment and tools, as well as conduct scientific research in this field and develop practical skills.
The textbook is intended for university students and can also be useful for rofessionals working in the agricultural sector.
