The State Program “Health,” initiated by the National Leader of the Turkmen people, Hero Arkadag, and successfully implemented today under the leadership of our esteemed President, Arkadagly Hero Serdar, recognizes that protecting the health of the population is an urgent and top-priority task. Resolving hygiene-related issues forms a key part of a healthy lifestyle, and its most important element is proper nutrition.
Recently, a textbook titled “Food Hygiene” was published for higher educational institutions (authors: J. Annanurow, A. Myradova, Sh. Garajaýew, S. Mämmetsähetowa — Ashgabat: Turkmen State Publishing Service, 2025), which is devoted specifically to this topic.
The textbook consists of two sections and 21 chapters. The first section, “Hygienic Foundations of the Physiology and Biochemistry of Nutrition”, covers: the basic rules of healthy eating, the energy value of food and energy expenditures, energy and substance metabolism, proteins, fats, carbohydrates, their nutritional and biological value, the role of vitamins in human nutrition, mineral substances, and valuable information on balanced nutrition.
The second section, “Nutritional and Biological Value of Food Products and Their Hygienic Characteristics”, presents: cereals and cereal products, milk and dairy products, meat and meat products, fish and fish products, edible fats, eggs and egg products, vegetables and fruits, food poisoning, hygienic characteristics of food preservation methods, pesticides and their role in food hygiene, state sanitary supervision, sanitary expertise of food products, its types and procedures, as well as hygienic requirements for the nutrition of children and adolescents.
This textbook can be used by students and professors of higher educational institutions, specialists in public catering and public health systems, as well as a wide range of readers.
